Welcome to the ninth edition of the The Salad Bar, a newsletter to keep you up to date on the website: Easy Salad

Here's what's new this month...

It's been 7 months since my last newsletter and I do apologize for my absence. My fishing season and some family matters have kept me busy and I have not had as much time to devote to this ongoing project.

The site has had a few changes in the past few months, the biggest one being the dismantling of the Easy Salad Store. I was not able to give it the attention it needed as my time would be better served getting more salads out there.

There have been some new sections added as follows:

1-Salad Sandwiches

This new section is for people who like their salads between 2 slices of bread. The main page has what I find is a healthy breakfast sandwich, basically a green salad with cheese on bread.

In this section you will find a link to some tasty chicken salad sandwich recipes like the one here:

Greek Chicken Salad Recipe

This greek chicken salad recipe makes one of the tastiest sandwiches ever. The recipe calls for 1 cup of cooked chicken for which I used 1 medium sized chicken breast. Of course you can always use any part of the chicken you wish.

You don't have to use every ingredient either. Not everybody has hot pickled banana peppers in their refrigerator. The feta cheese can be substituted with any cheese you may have. Even the lemon/lime juice can be replaced with any other fruit juice if needed.


1 cup cooked chicken-finely chopped
2 green onions-chopped
6-8 medium black olives-sliced
2 tbsp. chopped hot banana peppers
1/2 stick celery- finely chopped
1/4 cup bell pepper-chopped
1/4 cup feta Cheese-crumbled
1 pinch oregano
salt & pepper to taste


2 tbsp. mayonnaise
2 tsp. lemon or lime juice

Combine all ingredients and mix well. season with salt, pepper and oregano to taste. Refrigerate immediately if not using right away.

Makes 2-4 sandwiches.

2-About Me

In this section I introduce myself and explain how I started on the internet. It didn't happen overnight and I thought I would share my experiences in case anybody out there is considering building a website themselves.
