Here's what's new this month...

It's been 2 months since my last newsletter and I do apologize again for my tardiness. I have undertaken other projects this spring which have prevented me from working on the website full time. I'm afraid I would go crazy sitting at the computer 24/7 so it's nice to have other ventures to keep myself active physically.

The ability to work on this website part-time is a positive thing for me as it's more of a hobby than a job. Many people who have websites with Site Build It! like I do have turned their hobbies or interests into successful web sites. You can find out more about them as they tell their stories Here.


New Recipes

A couple of new recipes have been added to the new Salad Sandwiches section of the site:

1-Crab Salad Sandwich

Ingredients:

1 can (120g) crab meat-drain water out
1/4 cup bell pepper-sliced and chopped
2 green onions-chopped
1 clove garlic-grated
1 radish-grated
1/4 cup chopped celery
1 tsp. capers-chopped lettuce, greens or spinach

Dressing:

3 tbsp. cream cheese
1 tsp. lemon or lime juice
1 tsp. chili paste(hot)
1 pinch paprika
1 pinch coriander

In a small bowl fold cream cheese into lemon juice until smooth. Add chili paste, spices, and all other vegetables except lettuce. Mix well and add pepper if desired. You shouldn't need any salt if using capers.

Make sure the mix isn't too runny before adding crab. If it is add more cream cheese. Drain the crab meat well of water before adding. If it's too runny it will not sit well in your sandwich.

Garnish bread with lettuce, add crab salad mix and serve.

Optional Ingredients:

Here are a few ingredients which could be added to this salad if the above ones aren't totally to your liking:

Olives
Purple onion
Avocado
Chopped pickles or relish
Cucumber
Carrot-shredded

2-Egg Salad Sandwich

Ingredients:

4 hard boiled eggs-peeled, sliced & chopped
1 stalk celery-thinly sliced and chopped
3 green onions-chopped
1/4 cup shredded cheese
1 tbsp. chopped black olive
Bread
Tomato slices
Sprouts

Dressing:

1 tbsp. mayonnaise
1 tsp. mustard
1/4-1/2 tsp. chili paste(hot)
2 pinches paprika
1 pinch parsley
salt & pepper to taste

Mix eggs & vegetables in a small bowl. Adjust ingredient amounts if necessary to make an even mix. Add dressing ingredients sparingly one at a time and mix. Add salt & pepper if desired to adjust flavour. Refrigerate if not serving right away.

Add sliced tomatoes and sprouts to one side of the sandwich. Add egg salad mix and cover with other slice of bread.

2-Next Month

Next month there will be a new section added to the site with some interesting Ramen Noodle Salad Recipes. These salads are made with those instant noodles that come with a soup base powder under different brand names such as Ichiban, Top Ramen and Mr. Noodles.

I look forward to reporting my results to you next month as I will be experimenting with these recipes and taste testing as I go along.
