A Simple Waldorf Salad
January 27, 2009

Issue #012
January 2009

Hi , Welcome to the twelfth edition of the The Salad Bar, a newsletter to keep you up to date on the website: Easy Salad

Here's what's new this month...

Well, 2008 has rolled into 2009. It's been a slow season for salad-making as fishing has been my major activity since October. We've finally had a break so it's back to the kitchen again for a while.

After a few false starts due to being called to the fishing grounds at various intervals I have finally completed getting a tasty Waldorf Salad together. As usual I made a simple one as this shows you the basics. You can play with it later by adding optional ingredients. Here it is:

Waldorf Salad Recipe

1 apple-cored and cut into 1" cubes
1 celery stick-thinly sliced
1/4 cup walnuts pieces
1/4 cup seedles grapes-halved

2 tbsp. mayonnaise
2 tbsp. yogurt
1 tbsp. lemon juice
1 tsp. lemon rind(optional)

Cut up apple, celery, grapes and add to salad bowl. Add walnut pieces as well.

Mix dressing in a small bowl. If you are using juice from a real lemon grate some of the rind and add it to the mix. If you are using lemon juice from a bottle skip this ingredient.

Add dressing to bowl and toss salad well. Refrigerate for 1 hour before serving.

Coming Soon

Cole slaw and Greek Salad will soon find their way to the pages of Easy Salad Recipes. These are two great summer salads that can be made with ingredients from your gardens so keep them in mind when buying seeds this spring.

Next Issue Coming in April

Thank-you for reading this letter and visiting my site. The next installment will come out in April 2009. If you have any questions or comments please feel free to contact me Here.
