The Salad Bar returns! It's been 4 years since my last newsletter and much has happened since then:

Reality TV has become mainstream...

Social Media has exploded into a force to be reckoned with..

Yes it's all true, after a few very busy years away from salad-making the kitchen is open for business again.

After doing a few upgrades to the inner workings of the site the past few months it is time to get back to Making New Salads and Upgrading some of the old favorites.

The first upgrade is...

Classic Potato Salad Recipes

I wanted to upgrade this salad a bit using some added vegetables and ground flax seed to give it some extra fiber.


3 pounds potatoes
6 hard boiled eggs
1 medium onion
6 inches of cucumber
1/2 crown of broccoli
1 cup chopped celery
1 cup cherry tomatoes
2 tbsp. ground flax seed


1/2-3/4 cup mayonnaise
1-2 tbsp. mustard

Two Grape Salads

These are two similar salads made with different dressings:

Cream Cheese Dressing:

1/4 package cream cheese
1/4 cup yogurt
1/2 tsp. vanilla extract
1/2 tsp. poppy seeds
1 tbsp. sugar or xylitol

Coconut-Lime Dressing:

1 can coconut milk
1/2 cup flaked coconut
1/2 tsp. poppy seeds
1 tbsp. sugar or xylitol
1 tbsp. lime juice
