Bacon Ranch Potato Salad
I usually make bacon ranch potato salad with some sort of ranch dressing added to mayonnaise, and crispy bits of bacon.
There are a few varieties of ranch dressing that will work well with this dish. Bacon, peppercorn and 3-cheese Ranch are my favorites.
If you don't like regular bacon there are other options such as bacon bits, back bacon, turkey bacon, smoked ham, and low-fat low sodium bacon.
I'm sure there is some sort of vegan style of bacon out there but I would check the sodium content before I use it.
I use back bacon from my local butcher who only sells organically raised meat products. Back bacon has a lot less fat then regular bacon so that is worth the extra cost to me.
6-8 slices of bacon
1/2 bell pepper-any colour-chopped
3-4 green onion-chopped
1 celery stick-chopped
1-2 cloves minced garlic
salt & pepper to taste
1/2 cup mayonnaise or miracle whip
1/4 cup ranch dressing
Peel, slice and boil potatoes until cooked. Drain water and let cool.
Cook bacon until crispy, drain grease and let cool.
When potatoes are cool, put them in a large pot or bowl. Take a knife and cut potato into small pieces, about 1/2 to 1 inch in size.
Crumble cooled bacon and add to bowl.
Add chopped vegetables, salt & pepper, and dressing.
Mix all ingredients together until you get a smooth consistency. Add more mayonnaise if needed.
Taste salad and add more Ranch dressing or salt if it needs more flavour.
Cool in refrigerator 1-2 hours before serving.
Makes about 4-6 servings.
