Broccoli Apple Salad

When I make a broccoli apple salad I usually try to use a "green" apple like the Granny Smith or Golden Delicious as they have a tart, crisp flavour.

To make it interesting I added some pecans for some extra crunch and flavour.

Any nut will do though, almonds, walnuts and hazelnuts  are good as well.  

Another way to add some crunch is to add some sunflower or pumpkin seeds. 

When making the salad chop and add the apple last, after you have added the dressing, mixing it in immediately to keep the flesh from browning.  

Broccoli Apple Salad


4 cups broccoli
1 apple
1/2 cup purple onion
3/4 cup pecans-chopped or halved


1/2 cup salad oil
2 tbsp. apple cider vinegar
1 tsp.  mustard
salt and pepper-1 pinch each


1/2 cup mayonnaise
1 tbsp. apple cider vinegar
1 pinch of salt & pepper(each)

This is the Creamy Dressing one:

**For both dressings you may want to add 1 tablespoon of frozen apple juice concentrate(from the can).  This will give you a sweeter dressing with a stronger apple flavour**

*Chop broccoli flowerettes  into small pieces and put into a large salad bowl.

*Slice the onion fairly thin and chop, usually 2 slices will give you 1/2 a cup.

*Break up the pecans a little if they are halves before adding to the bowl.

*Add about 3/4 of the dressing and toss the salad.

*Chop apple and mix pieces into salad immediately so they are coated with dressing to avoid browning.

*Add remaining dressing if needed, also salt & pepper to taste.

*Refrigerate salad for a 1-2 hours before serving.
