Broccoli Cauliflower Salad

Broccoli Cauliflower Salad is a pairing of two vegetables which are good by themselves, and even better together. I have put together a couple interesting variations for you to try.  One with eggs and one with cheese....enjoy.


1-Recipe for Broccoli Cauliflower Salad

Broccoli Cauliflower Salad with simple mayonnaise dressingVersion 1 with egg

Ingredients:

2 cups broccoli flowerettes
2 cups cauliflower tops-chopped
1/2 cup chopped red onion
2-4 hard boiled eggs-peeled and chopped
1 chopped bell pepper

Dressing-Oil Based:

1/2 cup salad oil
2-4 tbsp. wine vinegar
1/2 tsp. basil
salt & pepper -a pinch or 2 each

Dressing-Creamy:

3/4 cup mayonnaise
2 tbsp. sushi, cider or wine vinegar

Combine all ingredients and refrigerate for at least 2 hours.  Toss again before serving.  Makes about 4 servings.

2-Broccoli Cauliflower with Cheese Salad

Broccoli Cauliflower with Cheese SaladVersion 2 with cheese

Ingredients:

2 cups broccoli flowerettes
2 cups cauliflower tops
1/2 cup red onion-sliced and diced
1 bell pepper-sliced and diced
cherry or grape tomatoes (1 cup sliced)
1 1/2 cups grated cheese
2 cans whole mushrooms
Salt & Pepper to taste

Dressing:

3/4 cup mayonnaise
2 tbsp.  wine, cider or sushi vinegar

Option for Dressing:  3 cheese ranch from the grocery store.

Directions:

Cut the broccoli and cauliflower into bite sized pieces.  Thin slice the onion and chop.

Slice and chop the bell pepper as well.  

Slice the tomatoes in half, squeeze out the seeds and cut into 1/4" thick slices.

Drain the can of mushrooms and add to the bowl.

Refrigerate salad for 1-2 hours, toss again and serve.
