Broccoli Walnut Salad

I have included two broccoli walnut salad recipes here.  The first one is your standard recipe with a choice of 2 dressings.  The second one is a "Waldorf Style" with grapes, apples and a sweet citrus dressing.

The mayonnaise can be substituted with yogurt but you may have to reduce the vinegar as it tends to get runny.

A 50/50 mix of yogurt and mayonnaise is also an option, and you could also use a low fat sour cream instead of the mayo. 

If you are not a big fan of bacon because of the fat, sodium and nitrates you can try bacon that has been sodium reduced, center-cut, and uncured.  

Another option is turkey bacon which is lower in fat and it is now possible to get no-meat vegan-style bacon.  I found a good site about bacon here.


Broccoli Walnut Salad

Ingredients:

4 cups broccoli flowerettes
1/2 cup red onion
1 stalk celery
1/2 cup raisins
1 cup chopped walnuts
6-8 slices bacon

Creamy Dressing:

1/2 cup mayonnaise
1 tbsp. mustard
1 tbsp. vinegar
1 tsp. sugar or xylitol
1 clove minced garlic(optional)
salt & pepper to taste

Oil/Vinegar Dressing:

Same as creamy dressing but with 1/2 cup Olive Oil replacing mayonnaise.

Broccoli salad with walnut and an oil vinegar dressing.Oil and Vinegar Version

Cook bacon until crispy, crumble and set aside.

Chop broccoli,onion and celery and put in salad bowl.

Add raisins,walnuts and dressing and toss salad.

Refrigerate for at least 2 hours before serving.

Add crumbled bacon just before serving.

Waldorf style:

Waldorf Style

Ingredients:

4 cups broccoli flowerettes
1/2 cup red onion
1 celery stick-sliced
1 apple-cored and chopped
1.5 cups sliced grapes
1.5 cups walnuts-halved or chopped

Dressing:

1.5 cup mayonnaise or yogurt
1 whole lemon
1 tsp. sugar or xylitol(optional)

Chop broccoli, onion and celery into small pieces and put into a salad bowl.

Add walnuts and chopped grapes as well, but do not chop up the apple just yet.

Add the mayonnaise or yogurt to a small bowl, grate the rind from the lemon and add it  to the dressing with the lemon juice. This can be done with any citrus fruit if you don't have any lemons ( Lime, Orange Grapefruit etc.).

Chop up the apple, add it to the salad with the dressing and mix well.

Refrigerate before serving.
