Chicken Salad Sandwich Recipes

There are two chicken salad sandwich recipes below but first here are some basics for making these types of sandwiches.


The basic ingredients for chicken salad sandwich recipes are: 
Finely chopped cooked chicken
Salad dressing-usually mayonnaise
Finely chopped celery & onion
Salt & pepper to taste

2-Optional Ingredients:

Here you can add just about anything. Some examples are:
Chopped pickles or relish
Hard boiled egg-chopped
Sliced olives
Cheese-grated, cubed etc.
Finely chopped or crushed fruit

3-Optional Vegetables:

Bell peppers
Cucumber-seeds removed

Cherry tomatoes, seeds removed

The best thing is to experiment a little to come up with something that is to your liking. Here are a couple of my favorite chicken sandwich recipes:

1-Chicken Pineapple Salad Sandwich

Chicken Pineapple Salad Sandwich

This chicken pineapple salad sandwich has a nice tangy flavour. It's a very basic salad that doesn't have all that many ingredients but still has a very unique taste. For the dressing you can substitute any mustard for the dijon if you wish.


2 cups cooked chicken-finely chopped
4 green onions-chopped
1 stick celery-finely chopped
4 slices red pepper
1 can crushed pineapple-strained
Salt & pepper


4 tbsp. Mayonnaise
2 tbsp. Dijon Mustard
2 tsp. lemon or lime juice

Cook chicken and refrigerate soon after. when cool, chop it up finely and add to bowl. Add other ingredients and mix thoroughly. Add salt & pepper to taste.

Store in refrigerator if not using immediately.

Make 4-6 sandwiches.

2-Greek Chicken Salad Recipe

Greek chicken salad sandwich

This greek chicken salad recipe makes one of the tastiest sandwiches ever. The recipe calls for 1 cup of cooked chicken for which I used 1 medium sized chicken breast. Of course you can always use any part of the chicken you wish.

You don't have to use every ingredient either. Not everybody has hot pickled banana peppers in their refrigerator. The feta cheese can be substituted with any cheese you may have. Even the lemon/lime juice can be replaced with any other fruit juice if needed.


1 cup cooked chicken-finely chopped
2 green onions-chopped
6-8 medium black olives-sliced
2 tbsp. chopped hot banana peppers
1/2 stick celery- finely chopped
1/4 cup bell pepper-chopped
1/4 cup feta Cheese-crumbled
1 pinch oregano
salt & pepper to taste


2 tbsp. mayonnaise
2 tsp. lemon or lime juice

Combine all ingredients and mix well. season with salt, pepper and oregano to taste. Refrigerate immediately if not using right away.

Makes 2-4 sandwiches.
