Chicken Waldorf Salad

This chicken waldorf salad is a great way to use up leftover chicken.   To make this recipe I made the dressing a little different than the standard mayonnaise style usually added.

I used a combination of sour cream, yogurt and lemon juice to give the salad a sweeter taste without adding sugar to it.

The walnuts can be substituted with any other nut such as pecans or hazelnuts.

The grapes can be switched as well with raisins, cranberries, currants etc.

Remember the best chicken salad recipe is one you tweak to fit your available ingredients and tastes. 

Chicken waldorf salad with vanilla citrus dressing.


1 cooked chicken breast(approx. 1 cup shredded meat)
1 apple
1 celery stick
1 cup sliced seedless grapes
1 cup walnuts


3 tbsp. sour cream
3 tbsp. vanilla yogurt
4 tbsp. lemon juice
1 tsp. salt
1 tsp. celery seed

Mix salad dressing in a small bowl and set aside.

Pull apart chicken meat and place on a clean cutting board or plate. Chop shredded meat with a knife and place in a large salad bowl.

Cut the grapes into 1/4" slices until you have about 1 cup and add to salad bowl.

Chop celery into thin slices and add to salad with 1 cup walnuts(halves or chopped).

Finally chop the apple into small thin pieces and add to the salad. Add the dressing right away to keep the apple from browning. Mix well.

Transfer the salad to a smaller bowl or a plate. Keep refrigerated.

This will make 1-2 meal size servings or 3-4 side servings. This salad shown here is what you would get using 1 chicken breast and one apple.
