Cold Italian Pasta Salad

"This cold Italian pasta salad will get your taste buds soaring!"

The ingredients for making this dish are similar to those used for making pizza.  Lots of hot meats, vegetables, cheese and spices.

The colored pasta makes it look like an interesting assortment just waiting to be eaten.

For this recipe you can use any assortment of meats and cheeses if you don't have the ones here.

I used plain canned olives but if you have some spicier ones all the better.

While I prefer the rotini noodles for this style of salad there is no reason you cannot use any of the other popular salad pastas.

In a pinch you could break open a box of mac & cheese and use those noodles quite successfully. 

Spicy Italian Pasta Salad


6 oz. tri color pasta
6 oz. hot pepperoni, cubed
1 small can sliced olives
1 roma tomato, sliced and diced
1 can whole or sliced mushrooms
6 oz. mozzarella cheese
2 sliced hot pickled peppers
Parmesan cheese


1/4 to 1/3 cup olive oil
3 tbsp. red wine vinegar
1/2 tsp basil
1/2 tsp oregano
salt to taste

Italian pasta salad

Boil pasta about 6-9 minutes until tender. Drain, rinse and let cool.

While the pasta is cooling mix up the dressing and set aside.

Put all other ingredients in a large bowl and mix well.

Add cooled pasta noodles and dressing.

Refrigerate at least 1-2 hours before serving, possibly even overnight to let the flavours blend.
