Grape Salad Recipe


This grape salad recipe is quite basic but I have included two different dressings to choose from.   First there is the standard dairy dressing made with cream cheese.   This is used in many fruit salads.

The second one is made with coconut milk paste which is a great alternative for those who would rather not use dairy.


For the first dressing I used light cream cheese and low-fat yogurt. This makes for a rather thin dressing but it does become less runny after refrigeration.  If you would prefer a thicker dressing you can substitute regular cream cheese for the light.  The same goes for the yogurt or you can  switch it to sour cream.

Some of these dishes have a brown sugar crunchy topping but I found it to be sweet enough by adding a small amount of sugar or xylitol.

Ingredients:

2 pounds seedless grapes(green, red or both)
1/2 cup chopped nuts(Pecans, walnuts, hazelnuts etc.)

Cream Cheese Dressing:

1/4 package cream cheese<BR>
1/4 cup yougurt
1/2 tsp. vanilla extract
1/2 tsp. poppy seeds
1 tbsp. sugar or xylitol

Coconut-Lime Dressing:

1 can coconut milk
1/2 cup flaked coconut
1/2 tsp. poppy seeds
1 tbsp. sugar or xylitol
1 tbsp. lime juice

Directions:

You can begin either version of this recipe by washing and slicing your grapes.  Add them to your salad bowl with the chopped nuts.

1-For the Cream Cheese Version:

Add the yogurt or sour cream to the bowl first, then fold the cream cheese into it with a fork.

Add the other ingredients and mix it up with an electric mixer until it's smooth and light.

Fold dressing into the grapes and refrigerate.

2-For the Coconut-Lime Version:

Chill the can of coconut milk in the refrigerator overnight.  Doing this will separate the milk leaving the water on the bottom and a thick paste on the top.

Remove the paste from the top of the can into a bowl.  

Using an electric mixer, break down the paste, adding a little bit of the coconut water to help thin it out.

Add your other ingredients, and keep mixing until it's light and fluffy.

Fold the dressing into the grapes and refrigerate.
